This is a great accompaniment with BBQ chicken, fish or my Rogan Josh lamb curry.
Double to feed a crowd.
Prep time - 10 minutes
Cook time - 30 minutes
Ingredients
- 500g rice (2 cups)
- 750ml of water (3 cups)
- 1 teaspoon GF chicken stock powder (Massel brand is good)
- ½ teaspoon ground cinnamon
- ½ teaspoon caster sugar
- 2 cinnamon sticks
- 2 star anise
- 1 teaspoon turmeric powder
- 60g butter
- ¼ cup currants
- ½ tablespoon green cardamom pods
- 1 teaspoon salt
Cooking Steps

Place all ingredients, except the currants, in a medium sized pot or rice cooker.

Bring rice to the boil, then reduce to a simmer.
Place lid on and cook, on simmer, for about 10 minutes, until rice is cooked through.

Finally check for seasoning and add a little extra salt to taste – only if necessary.

minty yoghurt dip and Naan bread.
