This is a great accompaniment with  BBQ chicken, fish or my Rogan Josh lamb curry.

 Double to feed a crowd.

 

Prep time - 10 minutes

Cook time - 30 minutes

Ingredients

  • 500g  rice (2 cups)
  • 750ml  of water (3 cups)
  • 1 teaspoon GF chicken stock powder (Massel brand is good)
  • ½  teaspoon ground cinnamon
  • ½  teaspoon caster sugar
  • 2 cinnamon sticks
  • 2 star anise
  • 1 teaspoon turmeric powder
  • 60g butter 
  • ¼ cup currants
  • ½ tablespoon green cardamom pods
  • 1 teaspoon salt

Cooking Steps

Place all ingredients, except the currants, in a medium sized pot or rice cooker.

Bring rice to the boil, then reduce to a simmer.

Place lid on and cook, on simmer, for about 10 minutes, until rice is cooked through.

Finally check for seasoning and add a little extra salt to taste – only if necessary.

A great, yet simple dinner party side dish served alongside my Rogan Josh Lamb,

minty yoghurt dip and Naan bread.
