 Check out these delicious vegetarian sausage rolls ... great for any 'finger food' event or a healthy party food alternative for adults and kids!

You will need a food processor handy for this one.

Prep time - 25 minutes

Cook time - 40 minutes

 

Ingredients

  • 2 x 400g tinned lentils, drained
  • 1 cup button mushrooms, sliced
  • 1 large brown onion, peeled & diced
  • 4 cloves fresh garlic, peeled & roughly chopped
  • 2 tablespoons Extra Virgin Olive oil
  • 1 medium carrot, grated
  • ½ cup grated tasty cheese
  • 2 tablespoons French Onion Soup mix powder, Continental brand is GF
  • 2 tablespoons sweet chilli sauce, GF option
  • 1 tablespoon basil pesto, store bought is fine, GF option
  • 3 tablespoons chia seeds
  • 2 extra eggs, whisked
  • 1 tablespoon rosemary leaves, finely chopped
  • Salt and pepper, a good pinch for seasoning
  • 5 sheets puff pastry, GF opton

Cooking Steps

Preheat your oven to 200° C, 390°F.  Next, heat olive oil in a medium pan on a medium heat and sauté onion, mushroom and garlic.

Add all ingredients, including cooked onion, mushrooms and garlic, to a food processor and blend until all ingredients are fully combined and ‘minced’.

Thaw pastry sheets and spoon one fifth of the mixture on the top of the pastry sheet and gently roll the pastry to form a sausage type shape.

Repeat this process another four times until all the mixture is used.

Next, Using a serrated edged knife, carefully cut each ‘roll’ of pastry into five even pieces, forming your 'party size' sausage rolls.

Place sausage rolls evenly on a well greased, large oven tray. Brush the top of the rolls with the 'extra, whisked' eggs. 

 

Tip: Don't have a pastry brush? I just use some soft plastic from the pastry lining/wrapping - scrunch it up and use it to dab the egg mix over the top of the uncooked sausage rolls.

Place the tray/s, in your already preheated oven and cook for approximately 40 minutes, until the rolls are golden brown.

 Serve with sweet chilli sauce or tomato sauce/ketchup.
