This dessert is a real crowd pleaser. Great for a celebration or halve large dinner party. It goes fantastically well with any Italian themed main, such as pasta dishes or a chilled pizza night, however it's perfect with any main.
Ingredients
- 9 eggs , yolks and whites separated
- 1½ cups caster sugar
- 1½ tsp vanilla extract
- 3 x 250g tubs mascarpone
- 3½ cups black coffee , strong
- 1 cup Marsala
- 3 x 200g packs savoiardi biscuits
- ½ cup cocoa powder , for dusting
Cooking Steps

Beat yolks and sugar in stand mixer or electric beater on speed a medium to high for 10 minutes or until it thickens and changes from yellow to a pale white.

Add vanilla and mascarpone, beat until just combined and smooth, set aside.

Using a clean bowl and whisk, add egg whites and beat until egg whites are stiff.

Gently fold through half of the whisked yolk and sugar mixture into the egg whites and fold with a spatula until completely blended. Then add the remaining yolk/sugar mixture and repeat the same folding action until combined.
*Gentle folding maintains the air and fluffiness of the eggwhites

Using a small bowl, combine coffee and masala together. Give each biscuits a quick, (but good ), dip in the coffee/masala mix - about 2 seconds per biscuit.
Then lay dipped biscuits on the base of a large, rectangular baking dish (sugary side up), covering the base completely

Next, cover the biscuit layer with half the cream and using a spatula, gently smooth over until biscuit layer is completey covered. top with another layer of coffee/liquor dipped biscuits, followed by another layer of cream, remembering to evenly smooth over until completely covered.

Refrigerate, uncovered for 5 hours (or more).

Just before serving, use a fine sieve to lightly dust top with cocoa powder (see pic).
To serve, use a sharp edged knife to divide the tiramisu into portions ... enjoy!
