Ingredients

  • 1kg thinly sliced pork strips
  • 1 tablespoon sesame oil
  • 1 jar green curry paste - Ayam brand is great
  • 2 x 400ml tins coconut milk - Ayam brand is great
  • 3 kaffir lime leaves - stem removed and finely sliced
  • 6 cloves garlic - finely chopped
  • 1 tablespoon minced ginger
  • 1 large bunch bok choy, chopped
  • 2 medium zucchinis, sliced
  • 1 good pinch salt, to taste
  • 4 cups cooked basmati rice

Cooking Steps

1

Preheat oven to high and preferably on grill setting.

2

Drizzzle an oven tray with sesame oil. Place meat evenly over the oiled tray, sprinkle with salt and cook in the oven for 15 minutes (approximately- keep an eye on it ).

3

While the meat is cooking in the oven, place the green curry paste into a large frypan and cook on high for 3 minutes to release all the the flavours and spices.

4

Next add coconut milk, garlic, ginger and finely shredded kaffir lime leaves to the green curry paste. Bring to the boil and then reduce to a simmer.

5

Add bok choy stalks and continue to simmer for 5 minutes.

6

Once meat is browned in the oven, remove meat and add it to the green curry sauce, along with any pan juices from the tray.

7

Finally add sliced zucchini, bok choy leaves  and simmer for a further 10 minutes.

Serve pork curry with basmati rice and store bought roti bread... enjoy!
