Thai Green Pork Curry

A total winner for a chilled dinner party or Sunday lunch.

Ingredients
- 1kg thinly sliced pork strips
- 1 tablespoon sesame oil
- 1 jar green curry paste - Ayam brand is great
- 2 x 400ml tins coconut milk - Ayam brand is great
- 3 kaffir lime leaves - stem removed and finely sliced
- 6 cloves garlic - finely chopped
- 1 tablespoon minced ginger
- 1 large bunch bok choy, chopped
- 2 medium zucchinis, sliced
- 1 good pinch salt, to taste
- 4 cups cooked basmati rice

Preheat oven to high and preferably on grill setting.

Drizzzle an oven tray with sesame oil. Place meat evenly over the oiled tray, sprinkle with salt and cook in the oven for 15 minutes (approximately- keep an eye on it ).

While the meat is cooking in the oven, place the green curry paste into a large frypan and cook on high for 3 minutes to release all the the flavours and spices.

Next add coconut milk, garlic, ginger and finely shredded kaffir lime leaves to the green curry paste. Bring to the boil and then reduce to a simmer.

Add bok choy stalks and continue to simmer for 5 minutes.

Once meat is browned in the oven, remove meat and add it to the green curry sauce, along with any pan juices from the tray.

Finally add sliced zucchini, bok choy leaves and simmer for a further 10 minutes.
Serve pork curry with basmati rice and store bought roti bread... enjoy!
