An old classic and sooooo quick & easy!

Cook time - 20 minutes
Ingredients
- 2 cups cooked chicken meat, roughly chopped, skin included *
- 3 cloves garlic, finely chopped
- 1 tablespoon sesame oil
- 1 brown onion, diced
- 3 x 400g tins creamed corn, GF option
- 1 x 400g tin corn kernels, undrained * add liquid to soup
- 2 tablespoons of chicken stock powder, Massel brand is GF
- ½ bunch shallots (scallions), finely sliced
- 2 litres water
- 1 tablespoon soy sauce - may need a little extra/to taste, GF option
Cooking Steps

In a large soup pot, sauté onion and garlic in sesame oil. Add cream corn & corn kernels (liquid from tin included).

Add all other ingredients except shallots. Bring to boil, then simmer for 15 or so minutes, finally add shallots and serve.
Great on its own or serve with crusty bread for a quick and easy meal. Enjoy !
* Store bought BBQ/Rotisserie chicken works great for this dish. I like to include the skin - it adds flavour!
