Sticky Pork Belly

This dish is so easy and absolutely delicious. I serve simply with rice and broccolini ... yum!

Cook time - 2 hours (slow oven)
Ingredients
- 2kg pork belly (approximately) – cut in 2cm (1 inch) pieces **
Marinade ingredients
- ½ cup oyster sauce
- ½ cup soy sauce (GF option)
- ½ cup sweet chilli sauce (GF option)
- ½ cup water
- ¼ cup brown sugar (or honey)
- 2 tablespoons minced ginger (or grated fresh ginger
- 4 large cloves garlic, peeled & finely chopped
- 3 star anise
Cooking Steps

Preheat the oven to 160°c (320°f). Using a sharp knife, slice pork belly into 2cm by 2cm pieces – large bite size. In a medium bowl, combine all marinade ingredients.
Place pork belly pieces in a large roasting pan.

Pour marinade over the pork and stir to thoroughly combine. Place marinated pork into the oven and cook for approximately 2 hours, keep an eye on it – it’s ready when golden and crispy.
*Tip to cut uncooked pork belly – Use a sharp knife to cut pork belly into cubes OR pop pork belly in the freezer for about an hour – it will be easier to cut semi-frozen.
