Rocket, Pear & Parmesan Salad

I love this salad with risotto or ravioli or grilled salmon, however you can have it anything you like!
Newsflash - just swapped the Parmesan cheese with 100g of crumbled Blue Costello cheese and it was AMAZING !!
Prep time - 5 minutes
Ingredients
- 250g pack of rocket leaves
- 2 large pears, skin on, finely sliced
- ½ medium red onion, very finely sliced
- ½ cup shaved parmesan
- 3 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- ½ teaspoon sugar, or a little extra, to taste
- salt & pepper, to taste
Cooking Steps

Combine balsamic vinegar, olive oil and sugar in a small bowl and whisk to combine. Season with salt and pepper to taste.

Add rocket leaves to a large bowl and drizzle with balsamic dressing, toss well. Add pear & onion and toss again.

Finally sprinkle shaved parmesan on the top of the salad, givine one gently toss to slightly blend.
Serve immediately ... great with pasta or grilled meat.
