Quiche Lorraine

This quiche is nice and light and very easy to whip up!
Prep time - 10 minutes
Cook time - 40 minutes
Ingredients
- 8 eggs
- 500g sour cream
- 500g bacon, rind removed and diced
- 4 cloves garlic, minced or very finely chopped
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup fresh grated cheese, I use Tasty cheese
- 2 sheets puff pastry, store bought
- cooking spray
Cooking Steps

Preheat your oven to 180°c (360°F).
Use a medium sized mixing bowl to whisk, sour cream, eggs, salt and pepper, until completely combined.

To prepare quiche base, spray cooking oil to completely grease your baking dish (including the edges).

Next, line your greased dish with 1 sheet of pastry.
Take the second sheet of pastry and cut to fit around the edges of the pie dish to form a crust. Use your fingers to lightly press down on the pastry to combine the sheets and 'hug' the edge of the dish.

Lightly fry bacon and just before crisp, add garlic to lightly sauté, set aside to cool. Then evenly spread diced bacon over the pastry base and carefully pour over the egg mixture.
Finally, evenly sprinkle with grated cheese.
For an extra crispy crust; before placing quiche in the oven, give the crust a generous spray of cooking oil.

Place quiche in preheated oven and cook for 30 to 40 minutes – until golden brown on top and cooked in the centre.
Serve with salad … enjoy!
Tip: Check the quiche is cooked by putting a clean knife in the centre, if it comes out clean your quiche is cooked through.
P.S - Add 4 cups of baby spinach leaves to make a spinach quiche.
