Philly Cheesesteak Sandwiches

Ingredients
1kg thinly sliced beef strips
500g thinly sliced pork strips
2 large red onions, thinly sliced *
1 large brown onion, thinly sliced *
6 tablespoons butter
6 tablespoons extra virgin oil
16 soft white long buns
3 tablespoons garlic powder
3 tablespoons onion powder
salt, to taste
white pepper, to taste
16 slices Swiss cheese
½ cup jalepenos, from a jar
1 jar bread & butter pickles
Accompany with:
French fries, store bought
and ...
1 cup of roast meat instant gravy with an added teaspoon of smoked paprika, (for an additional smokey flavour) - optional
Cooking Steps

Place a large frypan on a high heat. Add 2 tablespoons olive oil to the pan. When pan and oil are heated, add half the beef strips and sizzle in the pan, stirring occassionally.

When beef strips have begun to golden, add half of the sliced red onion and toss with the beef. At this point add 2 tablespoons of the butter to assist sautéing process.
Next add 1 tablespoon of the garlic powder, 1 tablespoon onion powder and salt and pepper to taste.

When the first batch of beef is cooked transfer beef into a casserole dish or cast iron pot with a lid.

Repeat steps one, two and three with the remaining beef and red onion.

Finish cooking process with the final amount of oil, pork and brown onion, adding the final butter to sauté the onion and the final tablespoon of garlic powder and onion powder and as done previously, season pork/onion mix with salt and pepper, to taste.
To this final batch of meat, add ¼ cup of water and bring to the bubble to thicken. This will add some final pan juices to the steak mix.

To serve:
Add the final batch of pork and pan juices to the beef that has been set aside and use tongs to gently toss to combine. Keep warm until ready to assemble.

Add the hot steak mix to the table with bread rolls, cheese slices, bread & butter pickles and jalepenos.

Guests can assemble their own sandwiches and cheese should melt on top if beef mixture is sufficiently hot.
Serve with fries that are cooked according to directions on the pack and and a jug of instant roast meat gravy, to pour over for a final slosh of indulgence!
* I use a mandoline to slice the onions really finely. It's quick and you get a great result.
