These party quiches are great for snacks, parties, picnics or stored in the fridge or freezer for a grab and go meal. Super easy and delicious.

Ingredients
- 6 sheets puff pastry
- 500g grated cheese
- 250g diced bacon
- 100g spinach leaves
- 4 cloves fresh garlic, finely chopped
- 8 eggs
- 500g sour cream
- ½ teaspoon salt
- ½ teaspoon pepper
- cooking spray
Cooking Steps

Use cooking oil spray to thoroughly grease each muffin tray. Next, cut each pastry sheet into 6 rectangles, (1 cut down the middle then 3 rectangles from each side).
Gently push each pastry rectangle into 3 x 12-hole well greased muffin trays.

Put about 1 tablespoon of diced bacon (uncooked) and 1 tablespoon (approximately) of baby spinach into each, pastry lined, muffin holes.

In a medium bowl, whisk eggs and sour cream. Add salt, pepper and garlic to the egg mixture and mix thoroughly.

Pour a scoop (about ¼ cup) of the egg mix into each muffin hole. Top each quiche with about a tablespoon of grated cheese.
Bake in a preheated oven at 180c for about 20-25 minutes or until cooked through and slightly golden on top.
This is a great recipe for a bridal or baby shower or ANY festive event!
*For a vegetarian version just omit the bacon and add more salt for seasoning.
