Orange & Almond Cake (Gluten Free)

This cake is fresh, delicious and so easy to make! Great with a dollop of double cream.
Prep time - 15 minutes (plus 60 minutes to simmer oranges)
Cooking time - 60 minutes
Ingredients
2 large oranges, good quality (I use naval oranges)
5 eggs
1¼ cups caster sugar
2½ cups ground almonds (almond meal)
½ tablespoon baking powder
¼ cup extra virgin olive oil
To garnish
2 tablespoons icing sugar

Preheat oven to 170°C. Thoroughly grease a springform cake tin, making sure base and sides are well greased.

Place the oranges in a saucepan and cover with water.
Bring oranges to the boil and simmer, covered, for 1 hour. Remove oranges, drain and cool.

Chop the oranges into quarters, discard any seeds, then place the chunks into a blender and puree until smooth.

Beat the eggs with the sugar until mixture slightly thickens.
Next add the orange puree, ground almonds, olive oil and baking powder and mix to combine.

Finally, pour cake batter into the greased pan and bake for 60 minutes.
Tip: To ensure cake is cooked through, place a small knife or skewer into the centre of the cake, if it comes out clean, the cake is ready.

Allow cake to cool in the tin for about 30 minutes.
Turn cake directly onto a cake plate and when the cake is completely cool, use a sieve to sprinkle icing sugar evenly across the top of the cake (see picture).
This cake can also be decorated with a thinly sliced twist of orange, along with a dollop of double cream ... enjoy!
