No Bake Banoffee Pie

Super easy, super delicious and best of all … no baking !!

 

Prep time: 20 minutes

Chilling time - 2 hours or overnight (in fridge).

 

Ingredients

  • 400g packet McVite’s biscuits*
  • 125g melted butter
  • 4 bananas, peeled and sliced
  • 1 teaspoon vanilla essence (optional)
  • 600ml carton cream, whipped
  • 2 tins Nestle’s Caramel filling**
  • 2 Flake Chocolate bars

Cooking Steps

Crumb the digestive biscuits in a food processor.  Combine the biscuits and melted butter.

Using baking paper, line the base of a medium sized ‘spring form’ cake tin (24 inch). Use the back of a spoon to press the mixture firmly into the base of the tin .

Chill the biscuit base in the freezer for about 15 minutes. Next, remove the biscuit base from the freezer and spread caramel filling evenly over the biscuit base.

Place a layer of sliced banana over the caramel layer.  Follow this with a layer of whipped cream.

Finally, crumble the chocolate flakes evenly over the top of the pie.  While pie is still in tin, cover with food wrap & refrigerate for at least two hours, preferably overnight.

Carefully remove the pie from the spring form tin, slice & serve.

 

*McVite’s biscuits are found in the biscuit aisle of main supermarkets

**Caramel filling is found in the baking or condensed milk section of main supermarkets (Nestle brand is the one I use)
