This side dish is a Christmas favourite.  It can be made ahead of time and served chilled or at room temperature … depending what side of the planet you are celebrating Christmas and whether the weather is hot or cold!

 

Definetely double this recipe for a crownd and/or Chrissy leftovers!

 

Prep time - 20 minutes

Ingredients

1kg (2.2 lbs) fresh green beans

 

 1 cup Kerry's homemade basil pesto

 

1 teaspoon salt       

Cooking Steps

Bring a large pot of water to the boil, add the salt.

While water is boiling,  prepare the beans by trimming/removing the small stem at the top off the beans.

Once the water has boiled add the beans and boil for exactly six minutes; set a timer, (the beans will be al dente’ – just cooked, but still firm, this is perfect).

 Next, drain beans and allow to cool for 10 minutes.

Finally,  toss through the pesto until all beans are coated. 

Serve on your favourite 'bling' platter!

* Pesto beans can be made several hours before serving, refrigerated and brought to bring to room temperature or served as a Summer salad. 

Great for any event or dinner party with any roast, grilled or BBQ'd meat. Especially festive at Christmas.
