Homemade Strawberry Jam

Aside from that check out this homemade strawberry jam, it’s very simple, healthy, sugar free (I used rice malt syrup and dates as a natural alternative) … yummo! 

 

Ingredients

  • 6 pitted dates (¼ cup)
  • 2 tbsp boiling water
  • 2 teaspoons vanilla extract
  • 2 tablespoons rice malt syrup
  • 2 cups frozen strawberries (store bought)
  • 2 tablespoons black chia seeds

Cooking Steps

Soak dates in boiling water, to completely soften; microwave dates & water on high for about 30 seconds.

Remove softened dates from the microwave and combine dates & any remaining ‘date’ liquid with strawberries, rice malt syrup, vanilla extract and half of the chia seeds.

Process all of the above ingredients on high speed until all the ingredients are smooth & blended.

Pour the jam mix into a small pot & heat on a medium heat. Add the last tablespoon of chia seeds and stir through. Bring to the boil and simmer for 2 minutes, stirring constantly.

Allow jam to cool for 5 minutes and pour into a sterilised jar (1½ cups capacity).

Put the lid on and store in the fridge. Lasts in the fridge for up to a month.

 

Serving suggestion – dollop on an a buttered English muffin with an extra dollop of low fat ricotta cheese (see picture above).

 

* You can use any frozen (or fresh) berries; blueberry or a mixed berry combo’.
