Keeping with the whole ‘GF’ vibe, these muffins are easy peasy!

Cook time - 25 minutes

Ingredients

2 ½ cups almond meal (flour)

½ teaspoon bi carbonate (baking) soda

¼ cup brown sugar

1 teaspoon ground cinnamon

1 pinch salt

3 eggs, whisked

1 teaspoon apple cider vinegar

¼ cup coconut oil, melted

1 large, very ripe banana, mashed

1 cup frozen blueberries

12 muffin cases

 

Cooking Steps

Preheat oven to 180°c / 360°f

Place all dry ingredients into a mixing bowl and combine. Add eggs, vinegar, coconut oil, and stir to combine.

Next add banana and thoroughly mix, followed frozen blueberries - gently stir through.

Finally, scoop the muffin mix into a muffin tray that has been lined with 12 muffin cases. Bake for 25 to 30 minutes.  

Allow to cool for 10 minutes before serving ... enjoy!
