Fluffiest Pancakes - EVER!!

These are the fluffiest and yummiest pancakes you will ever have … I promise!!
Prep time – 10 minutes
Cook time – 15 minutes
Ingredients
- 2½ cups plain flour
- 3 tablespoons sugar
- 2 teaspoons salt
- 1 teaspoon baking powder
- 1 teaspoon bi-carbonate soda*
- 600ml buttermilk
- 2 eggs
- ⅓ cup butter, melted
- 2 tablespoons extra butter
Cooking Steps

In a large mixing bowl, combine flour, salt, sugar, baking powder and bi-carb’ soda.
Separate egg yolks and whites, in two separate, small mixing bowls.
NB: Don't miss this step - seperating the egg yolks and the whites is the secret to fluffy pancakes!

In another separate bowl, combine egg yolks, melted butter and buttermilk.

Pour this liquid mix into the dry mix and combine using a wooden spoon or plastic spatula.

Next, add the egg whites to the pancake batter and gently fold through until combined, being careful not to over mix.

On a medium heat, add a dob of butter and melt, add a ladle of pancake mix (about ½ cup). Heat until bubbles begin to form, then the pancake is ready to gently turn (flip).

Cook pancakes on the other side until golden.
Repeat for each pancake, adding a little extra butter for cooking each time; until you have a stack of 8 pancakes.
Serve with a good quality maple syrup, berries and yoghurt (optional).
*Bicarbonate soda is also know as baking soda - NOT to be confused with baking powder.
