Simple and delicious, an easy Sunday lunch or dinner … great with a nice glass of red!

Ingredients
2 x 500g packs of dried fettuccini
500g diced bacon, rind removed
16 cloves garlic, finely chopped (2 whole bulbs)
1 birdseye chilli, finely chopped
8 medium tomatoes, diced *
2 bunches of fresh basil, roughly chopped
1 cup extra virgin olive oil
½ cup balsamic vinegar
1 tablespoon caster sugar
½ cup reserved pasta liquid, (reserve before draining pasta)
250g grated parmesan cheese, for garnishing
salt and cracked pepper, to taste
Cooking Steps

Add diced bacon to a large fry pan and cook on high until crisp.
Next add the diced garlic, chilli and chopped tomato to the bacon and sauté for a further minute.

In a small bowl or measuring jug combine olive oil, balsamic vinegar and sugar and whisk to combine.
Add the combined olive oil, balsamic vinegar and caster sugar to the pan, cook for another minute, turn heat off and rest.

While bacon is resting, cook the fettuccine in lightly salted boiling water; when pasta is slightly al denté, (cooked but still slightly firm), drain the pasta, but first reserve ½ cup of the pasta cooking liquid.

Once pasta is drained, add pasta and reserved pasta liquid to the bacon, tomato sauce mix.
Return the heat to high, toss and simmer for about 4 minutes until the pasta liquid begins to thicken the sauce.

Finally turn the heat off and add the chopped basil, stirring through completely.
Serve sprinkled parmesan cheese and cracked pepper ... enjoy!
* NB - instead of regular tomatoes, you can use 2 punnets of cherry tomotoes, halved.
