Ingredients
Dressing Ingredients
- ½ cup GF soy sauce
- ¼ cup fish sauce
- ½ cup GF sweet chilli sauce
- ¼ cup lemon juice
- 4 cloves garlic, finely chopped
- 2 tablespoons crushed ginger
Salad Ingredients
- 1 kg lean beef strips
- 3 tablespoons olive oil
- 1 large red onion, finely chopped
- 3 large avocados, sliced
- 3 Lebanese cucumbers, sliced
- 500g cherry tomatoes, halved
- 350g salad leaves
- 250g cashews
- ½ cup mint, finely chopped
- ½ cup coriander (cilantro), finely chopped
Cooking Steps

Heat 1 tablespoon of oil in a large, heavy based pan. Cook beef strips in batches of 3; adding 1 tablespoon of olive oil each time. Set beef strips aside.

In a medium sized bowl, combine all ‘dressing’ ingredients and whisk until combined.

Using a large bowl combine beef strips with all salad ingredients and toss. Drizzle with the dressing and toss a second time.
Serve immediately.
