Creamy Chicken Subs

This recipe is a real blast from the past for my family. A great family lunch or pack for a picnic.
Ingredients
- 1 BBQ (rotisserie) chicken, store bought
- 250g streaky bacon, rind removed & diced
- 2 large cloves garlic, finely chopped
- 1 cup whole egg mayonnaise, S&W mayonnaise is good!
- ½ cup diced shallots (scallions)
- 2 cups rocket
- salt & pepper, to taste
- 2 medium baguettes
- ½ cup cranberry sauce, optional
- ¼ cup butter, for spreading
Cooking Steps

To begin, pull chicken meat (including skin), off the bone. Use a clean, plastic chopping board to dice the chicken, cover and set aside.
Secondly, fry diced bacon in a pan until crispy; just before bacon is crisp, add finely chopped garlic and sautè with the bacon.

Next, use a medium to large bowl, (or container if assembling at a picnic), to combine cooked bacon, diced chicken meat, mayonnaise and diced shallots.

Finally, use a bread knife to carefully cut each baguette down the middle, longways.

To assemble subs:
Evenly spread a thin layer of butter over the inside of each baguette, followed by a layer of cranberry sauce, then evenly layer the rocket along the baguette.
Finally, generously stuff baguettes with creamy chicken mix, making sure to spread chicken/bacon filling evenly along the baguette.
To Serve:
Use a bread knife to cut each baguette into 3 to 4 pieces (to allow 1 to 2 pieces for each guest - see picture above).
Serve immediately or store in an airtight container and keep refrigerated (or chilled in a picnic basket).
