Christmas Pudding Ice cream

Yummy, easy, delicious, Christmassy & a little bit groggy … Merry Christmas!!!
PS - also a great way to use up those Ferrero Rocher chocolates that just keep coming :))
Ingredients
- 1 litre vanilla ice cream
- 500g Christmas pudding – not Christmas cake (store bought pudding works great)
- ½ cup brandy (or Kahlua, Tia Maria, Masala)
- 10 Ferrero Rocher Chocolates - optional garnish
Cooking Steps

Remove ice cream from the freezer. While still in its container, allow ice cream to stand for about 30 minutes until it becomes semi-frozen.

Next, place pudding in a large bowl, use a spoon or clean hands to crumble the padding.
Pour brandy evenly over the pudding.
Add the ice cream to the crumbled pudding and mix until pudding is completely blended with the ice cream.

Finally, return the ice cream to the empty ice cream and pudding containers.
Place lids back onto the containers and pop ice cream back in the freezer; allow to freeze overnight.
To serve; garnish with crumbled Ferrero Rochers (or your favourite chocolate wafers). Keeps in the freezer ages … up to 3 months.
