Chinese Pork Mince Stir Fry

This recipe is an adaptation from a weight watchers recipe, so good for the heart & the hips!
Prep time - 10 minutes
Cooking time - 15 minutes
Ingredients
- 1kg pork mince
- 500g green beans, cut into 3cm lengths
- 4 spring onions, white part only
- 1 teaspoon chilli flakes
- 3 cloves garlic, finely chopped
- 2 tablespoons minced ginger
- 1 tablespoon sesame oil
- 1½ tablespoons brown sugar
- ¼ cup soy sauce
- ¼ cup oyster sauce
- ¼ cup water
Garnish with
- ½ cup fresh basil leaves
- ¼ cup crushed peanuts
Cooking Steps

Combine garlic, chilli flakes and ginger in a small bowl.

Heat a non-stick wok or large frying pan over high heat, add oil and heat. Next, add half of the pork mince and stir fry, breaking up any lumps, until brown. Remove and set aside.

Reheat wok and cook remaining pork until well browned. Add spring onions and chilli mixture and stir fry for 1 minute. Add cooked pork mince, sugar, soy sauce, oyster sauce and water.

Allow to cook for 2 minutes or until sauce has reduced a little. Add beans, peanuts and half of the basil. Stir fry for a further minute.
Serve immediately, sprinkled with remaining basil leaves and crushed peanuts. Accompany with cooked white rice.
