Chicken Satay Noodle

Ingredients
Satay Sauce ingredients
- ½ cup crunchy peanut butter
- 2 tablespoons fish sauce
- 2 tablespoons soy sauce
- ¼ cup sweet chilli sauce
- ½ tablespoon honey
- 2 teaspoons cornflour
- 4 cloves garlic, finely chopped
- 2 teaspoons curry powder
- ½ cup cold water
Chicken
- 350g chicken breast, cut into strips
- ½ tablespoon bi carbonate soda (baking soda)
Stir fry ingredients
- 250g fresh Hokkien noodles
- 1 large brown onion, peeled & cut into wedges
- 1 large clove garlic, finely chopped
- 1½ cups broccoli, cut into small chunks (or any combo' of green veg' e.g. sliced celery and/or capsicum)
- 1 large carrot, cut into strips (no need to peel)
- ½ cup frozen peas
- 1 tablespoon sesame or peanut oil
Cooking Steps

To tenderise uncooked chicken; place in a medium bowl and toss chicken pieces thoroughly in bi - carb soda (set aside and rest for 20 minutes).

To make satay sauce, place all ingredients in a medium saucepan, whisk and stir over a low to medium heat until thickened.
When sauce is thickened, take off the heat and set aside.

To prepare noodles, place noodles in a colander and run noodles under warm water to loosen and soften, place in a bowl and set aside.

Next, heat oil in a large pan or wok, add onion and sauté.

Place uncooked chicken in a colander and rinse off ALL bi-carb soda under cold water and then drain well.

Add rinsed chicken to sautéed onions. Cook until chicken changes from pink to white & slightly golden.

Add remaining vegetables, including garlic to the pan/wok.
Next, add satay sauce and allow to simmer 3 to 5 minutes (depending how crisp you like your veggies)

Finally, add noodles and toss through. Cook for a further minute or so until noodles are completely coated in satay sauce.
Serve immediately ... enjoy!
