Cheat’s Pasta Alla vodka

Delicious, easy and cheap (made even cheaper by swapping out vodka for wine, hence the 'cheat').
Prep time - 10 minutes
Cook time - 20 minutes (max)
Ingredients
- 750g penne pasta (GF option)
- 1 tablespoon salt, to add to pasta water
- 2 tablespoons extra virgin olive oil
- 2 tablespoons butter
- 1 tablespoon chicken stock powder - Massel brand is vegan & GF
- 2 teaspoons chilli flakes
- ¼ cup tomato paste
- 600ml thick cream
- ½ cup dry, white wine
- 6 cloves garlic, finely chopped
- 1 large red onion, diced
- 1 large brown onion, diced
- 1 to 2 cups reserved pasta water (add to your taste)
- 1 cup shaved parmesan cheese, to garnish
- ½ cup basil leaves, to garnish
Cooking Steps

Boil and salt pasta water in a large pasta pot.

While water is boiling, add olive oil to a large, deep frypan and sauté both onions on a medium to high heat until onion becomes translucent.

Add the garlic and butter to the onion and sauté for a further minute.

Next, add the tomato paste and wine to the frypan, increase the heat and cook on high for a further couple of minutes, deglazing the wine/tomato paste.

Add the cream, chilli flakes and chicken stock powder to the frypan and bring the sauce to the boil.
Once the cream sauce is bubbling, reduce the heat and simmer sauce for about 10 minutes, (while the pasta is cooking -see next step ).

To cook the penne pasta;
add the penne to the boiling pasta water and cook the pasta until it's al denté (cooked but still a little firm).
When pasta is cooked, drain the pasta, reserving 2 cups of the pasta water.

Finally, add drained pasta and reserved pasta water to the simmering sauce and continue to simmer for a further 4 to 5 minutes, so the sauce thickens and coats the penne.
Serve with a garnish of parmesan cheese and roughly torn basil leaves (see pic below).
