These are great to make ahead of time, freeze and just microwave to have a quick & healthy, ‘on the go’ breakfast. Naturally sugar free too!

 

Prep time - 15 minutes

Cook time - 30 minutes

 

Ingredients

  • 4 cups almond meal (almond flour)
  • ½ cup coconut flour
  • 2 tablespoons ground cinnamon powder
  • 6 eggs, whisked
  • 1½ cups unsweetened almond milk
  • ⅓ cup avocado oil (or olive oil)
  • ½ cup rice malt syrup
  • 500g frozen mixed berries, store bought
  • 4 medium red apples, diced, skin on
  • 24 paper cupcake cases

Cooking Steps

Preheat your oven to 180° C (350°F).  

Place almond meal, coconut flour & cinnamon into a large mixing bowl, stir to combine.

Add whisked eggs, oil and almond milk, stir until combined.

Finally, fold through diced apple and frozen berries until just combined.

Place paper muffin cases into muffin trays and fill each case with the mixture.

To cook, place muffin trays in the oven and cook for approximately 30 minutes, until muffins are golden brown on top.

Allow muffins to cool, freeze in airtight containers, ready to grab and go for brekkie in a hurry.

 

Also great for a snack or healthy morning tea treat!
