B.L.T -Bacon, Lettuce, Tomato pizza - with Mayo'

These pizzas are simple & a good dollop of whole egg mayonnaise (mayo’), is absolutely delicious on top.
Preparation time – 15 minutes
Cooking time – 25 minutes

Ingredients
- 4 medium size pizza bases, store bought, GF option available
- 1 x 400g jar roasted garlic & tomato pasta sauce, store bought, GF option
- 1 x 400g can of diced tomato
- 2 cups grated mozzarella cheese
- 500g bacon, diced
- 3 medium tomatoes, sliced
- salt, to taste
- sugar, to taste
- 2 cups rocket leaves
- 1 cup whole egg mayonnaise, SW brand is really good - see picture below
Cooking Steps

Preheat your oven to 200°c / 390°f.

Next, fry bacon pieces in a pan and remove from the pan just before crisp.

Using a medium sized mixing bowl, combine tin tomato and tomato pasta sauce with a with a pinch of salt and sugar, to taste - this neautralises the acidity of the tomato and balances the flavour of the sauce.

Spread the tomato sauce evenly over pizza the bases.

Evenly sprinkle cheese over the four bases. Top pizzas with tomato slices and bacon pieces.

Place pizzas on pizza trays or just place directly on the oven rack and bake the pizzas in an oven for about 25 minutes, until the cheese is golden and bubbling.

Remove pizzas from the oven, slice pizzas into even pieces.
To serve
Top pizzas with rocket leaves (see picture) and for the secret ingredient to this recipe ... generously dollop each slice of pizza with the whole egg mayonnaise, (see picture).
Serve with butter knives so your guests can spread the mayo' over each pizza slice ... a bit interactive & yummo!
