A great spin on this Asian classic. The texture of the fresh nooodles is next level and the scotch fillet steak, cooked and then sliced and stirred through the dish, adds to the freshness!
Ingredients
For the steak:
- 750g scotch fillet steak,
approximately 3 x 250g steaks
- 2 tablespoons sesame oil
- 1 tablespoon salt
- 1 tablespoon cracked pepper
- 1 lime, juice of
For the noodles:
- 1kg fresh, stirfry noodles, available from Asian grocery store, in the fridge section, see picture on slideshow above.
For the stirfry:
- 3 cloves garlic, finely sliced
- 1 bunch Asian spinach, roughly chopped, available from Asian grocery store
- 2 medium carrots, sliced, no need to peel
- 2 extra teaspoons sesame oil, for frying
Pad See Ew Sauce:
- ¼ cup soy sauce
- ¼ cup oyster sauce
- 2 tablespoons kecap manis
- 1 tablespoon sesame oil
- 1 teaspoon brown sugar
- 1 teaspoon fresh ginger
Cooking Steps

To begin, allow steaks to come to room temperature. Next, combine all the Pad See Ew sauce ingredients in a small bowl and set aside.

After about 30 minutes of resting, coat the steak in salt and pepper, heat oil in the pan at a high temperature and cook the steaks on high until medium rare for 3 to 4 minutes each side.

Once steaks are cooked, set aside to rest, squeeze lime juice over each steak and move on to stir frying the vegetables.
NB: You may need to cook steaks one at a time for the best outcome, so steaks sizzle and don't stew.

Using the steak pan or a wok, add the extra sesame oil and bring the heat to high. Add the onion, carrot and spinach stems and stirfry for about 3 minutes.
Add the spinach leaves and the garlic and continue to stir for about 1 minutes.

Next, prepare the noodles by loosening them, slicing if necessary and further loosening in the microwave for 30 seconds, see picture on slide deck above.
Add noodles to the vegetables and toss to combine. Add the Pad See Ew sauce and toss to coat the noodles and further toss the noodles to heat through, on high for about 2 minutes.

Once the steak has rested, for about 5 minutes, slice on chopping board, see picture for an idea of how wide to slice the steak.
Finally, add the steak slices and juices into the Pad See Ew and gently toss through.
Serve immediately ... enjoy!
