Beef Brisket

Having married a Southerner from the U.S.A, my son now has a growing affinity for all things barbecued. So this beef brisket is now his Sunday night signature dish, which we all really enjoy!
Ingredients
- 2kg beef brisket
- ¼ cup olive oil
- ¼ cup Worcestershire sauce
- ½ cup ‘Montreal’ or Texas seasoning rub
- 2 tablespoons ground coffee (not instant coffee)
- 4 sprigs of fresh rosemary
Cooking Steps

Rub meat with olive oil, Worcestershire sauce, Montreal or Texas seasoning and coffee.

Make 4 small, deep incisions into the meat and insert the rosemary sprigs. Cover the beef and marinade overnight.

Preheat the oven on low, 100°c (210°f). Place beef in a roasting tray with ½ cup water poured into the base of the pan (don’t pour it over the beef).
Cover beef and cook for 10 hours, refilling the water every 2-3 hours.

Remove beef, loosely cover and allow to stand for 15 minutes . Carve beef, return meat to baking tray, spoon remaining pan juices over brisket and serve.
Serve with potatoes and your favourite salad.
